An instant saused frozen noodle is prepd. by (a) mixing wheat powder with salt, calcium carbonate, water etc. and kneading in a vacuum mixer, (b) aging the obtd. dough at 18-25 deg.C for 0.5-1 hr., laminating the aged dough, cutting, boiling, washing and cooling to obtain the noodle (I), (c) putting meat in water, boiling for about 3 min., adding vegetables, re-boiling for about 2 min., mixing with one of bean sauce (jajang), spaghetti, curry or hash, and seasoning the product to obtain a sauce paste (II), (e) pre-freezing the obtd. (II) at 0-5 deg.C and quick freezing at -35 - -70 deg.C to obtain an ice block of sauce (III), and (f) adding the obtd. (III) into the (I) and quick-freezing to obtain the final product. |
