Nitrate compounds (I), which are useful as substrates for biochemical and pharmacological studies, are new. Nitrate compounds of formula (I) are new. R<1>-R<3> = R<4>, CH2-ONO2, CH2-OR<5>, CH2-X, COOR<5>, COX, CH2COOR<5> or CH2-COX; R<4> = CHO; R<5> = H or 1-6C alkyl; X = halo; and provided that at least one of R<1>, R<2>, R<3> is R<4>. Independent claims are included for: (A) use of compounds corresponding to (I), in which the CH2-NO2 group (which is attached to the central C atom along with R<1>, R<2> and R<3>) may be replaced by a group as defined for R<1>-R<3>, as substrates for biochemical and pharmacological investigations; and (B) the preparation of (I) (as described in (A)) form aldehyde of formula (V).
