PROBLEM TO BE SOLVED: To obtain the subject food capable of obtaining a soft and mellowing eat taste of a sea urchin, and not generating a water separation phenomenon or a bitterness due to a deterioration in freshness thereof by mixing a raw sea urchin essence and/or a raw sea urchin paste with a fine flour of a devil's- tongue. SOLUTION: This raw sea urchin like food is obtained by adding a thickening agent and an alcohol as a supplemental component, and water to (A) a raw sea urchin essence and/or a raw sea urchin paste and (B) fine flour of a devil's- tongue as major components, mixing the above components, leaving the mixture for a set time and then filling into a packing bag. It is possible to obtain an eat feeling and an aroma of the raw sea urchin in a best state, when the mixture is prepared by using 15-25wt.% component (A), 3.5-5wt.% component (B), 3.5-5wt.% thickening agent, 2-5wt.% alcohol and rest of water. |
