PROBLEM TO BE SOLVED: To restore a browned vegetable to green color having excellent color tone and regain the green color of vegetable in a state stably storable over a long period by treating a vegetable to develop green color. SOLUTION: A faded vegetable is brought into contact with a solution containing metallic ion to regain or keep the green color of the vegetable by the action of the metallic ion. In the above method, a solution containing zinc ion is used as the solution containing metallic ion. |
