A shirred sausage casing is mounted over a tube of flexible material that is sealed at each end and that extends beyond each end of the casing, said tube having been so inflated that an air cushion of greater diameter than the casing is formed at each end, such that when the casing is swollen, as by immersion in water, prior to filling, the cushions prevent any substantial elongation and loss of shirring. Desirably one end of the sealed tube has a weakened rupture point, such that when the swollen assembly is forced over the stuffing horn, the increase in pressure ruptures the tube, which may then be withdrawn from the free end of the casing, which is thereafter closed. |
