Rapid cooling of pretein-contg. products. Process comprises moulding under pressure a protein-contg. food into a continuous elongated body; cutting it into ready-for-use pieces, compressing the product into a container made from aluminium sheet and opened at most at two small sides, and cooling the two large sides with jets or air cooled to a temp. of -25 degrees C, or below. This process is suitable for use e.g. on fish factory ships. |
