PROBLEM TO BE SOLVED: To provide a frozen cooked eggplant which can reduce an edible oil artificially adhered to the surface of the eggplant car perfectly be frozen, has a good appearance, and gives cut pieces that are not adhered to each other and have non-blackened cross sections, when cut. SOLUTION: This frozen cooked eggplant is obtained by adhering an edible oil to the surface of a raw eggplant, roasting the eggplant, and then freezing the cooled eggplant.
