The process consists of (a) preparing a dough from flour, salt, yeast and other ingredients and kneading it; (b) cutting into portions, shaping and allowing to rise; (c) cooking in an oven until the dough has expanded completely, without allowing it to brown; and (d) rapid freezing at very low temp. For use, the bread is baked in an oven, giving completely fresh product as if it has just left the bakery.
