PROBLEM TO BE SOLVED: To produce a food or drink containing a sugar transfer reaction product and having good taste and flavor by culturing a microorganism capable of producing cyclomaltodextrin glucanotransferase having respective specific partial amino acid sequence, molecular weight and thermal stability in a culture medium. SOLUTION: A food or drink such as a starch-containing food or drink, a fermented food or drink or a sweetener is produced utilizing a sugar transfer reaction by using a microorganism capable of producing a polypeptide originated from Bacillus thermophilus, having partial amino acid sequences expressed by the formulas I to V in the order from the N-terminal side, a molecular weight of 70,000±10,000 determined by SDS-polyacrylamide gel electrophoresis and a thermal stability of >=70 deg.C and exhibiting cyclomaltodextrin glucanotransferase activity, culturing the microorganism in a nutrient medium, reacting the produced polypeptide with starch and using the produced sugar transfer reaction product as an essential component of the food or drink. |
