PURPOSE: A method for manufacturing an instant shiitake mushroom seasoned block is provided, to easily eat shiitake mushroom and preserve the physiologically active substances, taste and flavor for a long term by using a lyophilization method. CONSTITUTION: Shiitake mushrooms are cut into 0.5x2-3cm size. Seasoned shiitake mushroom prepared by the lyophilization method contains the cut shiitake mushroom 35-38%, large green onion 12-13%, onion 10-12%, carrot 7-8%, brown seaweed 10-11%, garlic 7-8%, shiitake mushroom extract 8ml, soy sauce 1ml, distilled water 31ml, dextrin 2-4% and starch 1-2%. All ingredients are dissolved and mixed to lyophilize at -50deg.C in a forming frame.
