PROBLEM TO BE SOLVED: To provide edible oil and fat in which rise of an acid value caused by heating is suppressed, and a generation rate of a discomfort odor component during heating is reduced.SOLUTION: Edible oil and fat contain (A) oil and fat having a linolenic acid content of 2 mass% or more, and (B) oil and fat having a linolenic acid content below 2 mass%, treated by one or two or more kinds of basic salts, neutral salts or acid salts.SELECTED DRAWING: None |
