Bread dough rolling unit for rolling balls of dough (7) produced by a cutter and separator and for rising before baking, comprises two concentric panels (1, 2) set one inside the other and forming a circular V-section trough (6) between their adjacent edges with walls at an angle of 25 - 60 deg to one another. One of the two panels (2) is rotated relative to the other by a motor attached to a central shaft (3), or both panels can be rotated in opposite directions. The inner panel (2) is in the shape of a low truncated cone, and the outer panel has a gap (5) adjacent to a deflector (4) for discharging the completed dough balls.
