PURPOSE:To prevent the generation of a slime block by early defoaming, to enable the operation of a fermentation tank in various manner and to carry out fermentative production in high yield, by detecting the generation of foam with a specific foam-sensitive driving sensor and injecting a defoaming agent according to the signal transmitted from the sensor. CONSTITUTION:A fermentation liquid (a) is charged in a fermentation tank 1, air is supplied from an air pipe 3 through an air diffuser 2 and a stirring blade 5 is rotated with a driving apparatus 8 and a stirring shaft 6 to carry out the fermentative production process. The foam (b) generated from the fermentation liquid (a) is detected by a contact foam sensor 10a set at a proper position. The sensor 10a is connected to a sensor-driving cylinder 11 via a mechanical seal 13 and is made to be vertically movable with a drive-controlling apparatus in an arbitrary manner. The detection signal transmitted from the sensor is sent to a converter 14 to open a control valve 4a. A defoaming liquid is poured from a defoaming liquid injection pipe 4 into the tank 1 while the opening signal is transmitted and the valve 4a is closed by the closing signal. The foam in the fermentation tank can be defoamed at an early stage by this process.
