PROBLEM TO BE SOLVED: To obtain the subject product without changing the monosaccharide component of chicory, and not damaging the specific quality of the chicory as a beverage by coagulating soluble chicory particles to form granules. SOLUTION: This chicory based product is obtained by preparing a food layer 6 having a shape of a soluble powder based on solely the chicory or a mixture containing at least chicory of one third of weight thereof without moistening beforehand, rising the temperature of the food layer 6 surrounded by air, up to a sufficiently high temperature for melting the surface of the chicory powder, and then cooling the layer. After the cooling treatment, the consequently coagulated and granulated layer was preferably crushed, ground and sieved so as to make a granular product having 0.5-3mm granule size. The powder layer is also put into a molding box for arranging an external form of a slab formed product obtained by pressing the coagulated and granulated powder together. |
