PROBLEM TO BE SOLVED: To provide the texture softening method of an octopus capable of reducing processing processes, simplifying a processing method, keeping a soft state for a long time without using additives at all and preventing it from becoming watery and texture from being changed even when freezing and defrosting are repeated. SOLUTION: An unloaded raw octopus is divided into a head part and appropriate several feet, the internal organs are removed and an individual body is formed and then washed. Then, it is tentatively frozen, then defrosted, immersed in the hot water of 90-95 deg. for 3-8 seconds corresponding to the size of the individual body and heated. The heated individual body is cooled by water or the like and then, boiled for 30-50 seconds. The boiled individual body is cooled, frozen and preserved. |
