The present invention refers to a product for stabilizing the saccharose contained in the sugar cane and application method having pH stabilizer activity, biochemical, bactericidal, enzymatic, detergent and sanitizer consisting of an aqueous solution comprising an active agent, a carboxylic acid or derivative salt, a short-chained alcohol, terpene, surfactant and a buffer solution which purpose is to principally avoid the inversion of saccharose.
