The gas may be nitrogen. The food may be prepared by continuously beating the food in a rotating drum at a pressure of 1-5 atmospheres and at a temperature of at least 1‹C (e.g. 1-8‹C or 12-15‹C depending on the food) with the gas. The food may be based on cream, yoghurt, curds or butter. The food may comprise jam, cocoa, spice, salt, sugar, artificial sweeteners, herbs, anchovy paste, fruit concentrates, gelatin, starch carrageen, carob bean, alginates, agar-agar, pectin, lecithin and whipped edible protein. |
