Continuous extn. of water soluble materials from dates - by preparing date chips without compression of fruit thus counteracting cell destruction and avoiding gelling of crude juice on storage

Date chips are prepd. from whole date fruit, including stones, by treating the harvest-fresh dates as fruit and storing them without compression so as to counteract cell destruction. Process is used in continuous extn. of water-soluble materials, including sugar and sugar syrup, and allows depectinising of crude juice without gelling on further storage. Saccharification of apparatus and long, high temp. heat treatments are obviated.
