EMULSIFICATION STABILIZER

PROBLEM TO BE SOLVED: To provide an emulsification stabilizer comprising an oil-in-water compsn. which not only forms an extremely stable emulsified state when added to a well-known emulsifier but can form a good emulsified state even when the stabilizer is used in a single state, and which shows high safeness. SOLUTION: This emulsification stabilizer consists of an esterified product of glycerine polymer and one or more kinds of fatty acids selected from 8 to 18C, preferably 16 to 18C straight-chain fatty acids, unsatd. fatty acids and branched fatty acids or 9 to 20C fatty satd. dibasic acids satisfying glycerine polymer : fatty satd. dibasic acids = 1:(0.3 to 0.5) molar ratio. The emulsification stabilizer consists of a partially esterified product in which 50 to 75%, preferably 55 to 75% of hydroxyl groups in the glycerine polymer remain.
