Process for the preparation of a flavour extract, in which a mixture containing at least Trigonella foenum-graecum seeds is prepared, this mixture is subjected to enzymatic hydrolysis, it is heat-treated, it is centrifuged, so as to isolate the liquid phase containing the flavours, and then this liquid phase is evaporated, so as to concentrate it. The invention also relates to the flavour extract obtained using the said process and its use for the preparation of food compositions. |
