PROBLEM TO BE SOLVED: To obtain a bacteriostatic and antibacterial agent suitable for a use for a drink and food and derived from a natural product by including a papaya seed extract. SOLUTION: This bacteriostatic and antibacterial agent is obtained by forming a papaya extract by removing flesh part by sufficiently washing a papaya seed and pulverizing the washed papaya seed by a pulverizer, or carrying out extraction operation by adding water or an organic solvent to the pulverized papaya seed to provide an extracted liquid, or removing the water or the organic solvent from the extracted liquid to provide a concentrated liquid or drying the extracted liquid to provide a powder, and using the pulverized papaya, the extracted liquid, the concentrated liquid or the powder as the papaya extract alone or by mixing the papaya extract with an organic acid, an antioxidant, a pH regulator, an emulsifier, etc. The bacteriostatic and antibacterial agent is added to an egg product such as pudding, steamed egg custard, mousses and pot-steamed hotchpotch, and other food and drink preferably so as to be 10-50,000 ppm to impart the bacteriostatic and antibacterial activities against bacteria belonging to the genus Salmonella thereto. |
