The invention relates to a novel chitinase, its production and use. Areas of application of the invention are medicine and the food industry. The novel chitinase is produced from the seed of the giant bean Canavalia ensiformis (L.) DC.). It is characterized by a molecular weight of 26225, an isoelectric point pH 9.3 and an optimum pH for fission of chitin pH 6.0, as well as by the sequence (a).
