PROBLEM TO BE SOLVED: To obtain the subject preparation capable of formulating with various aqueous compositions while keeping excellent disperse stability even in wide temperature area, especially low-temperature area by formulating a carotenoid pigment with a disperse stabilizer containing a soybean extract fiber as an active ingredient. SOLUTION: This pigment preparation comprises (A) a carotenoid pigment (preferably lycopene) and (B) a disperse stabilizer containing soybean extract fiber (preferably having 5,000 to 1,000,000 average molecular weight) as an active ingredient. It is preferable from the viewpoint of disperse stability, especially in low temperature area to use a carotenoid pigment having 0.2-0.3 μm particle diameter as the component A. The component A is preferably formulated with the component B so that a weight ratio of the component A to soybean extract fiber is (1:100) to (1:1,000). It is preferable from the viewpoint of disperse stability of the component A to further formulate an aqueous composition in which components A and B are added with tomato juice. Furthermore, the soybean extract fiber is obtained by water extraction, heat elution or the like from a raw material containing soybean hemicellulose such as bean-curd refuse. |
