PURPOSE:To provide an antifreezing liquid containing ethyl alcohol, an amino acid and cyclodextrin as main components, substantially free from the evaporation of the ethyl alcohol and from the generation of the odor of the alcohol, and useful in the fields of frozen foods, ice-making machines, various cold- insulating devices, etc. CONSTITUTION:20-80 pts.wt. of ethyl alcohol, 1-80 pts.wt. of an amino acid (e.g. glycine), 1-60 pts.wt. of cyclodextrin containing >=50wt.% of a branched cyclodextrin having the branches of maltose and produced by the action of an enzyme, and 0.01-0.015 pt.wt. of a silicone emulsifier comprising an oil-in- water type emulsion produced by emulsifying a silicone oil compound are compounded with each other to obtain the objective antifreezing liquid. The antifreezing liquid is charged in a freezing tank cooled at <=-40 deg.C, and an agricultural or marine product or a processed food can be soaked in the antifreezing fluid to instantly freeze the product or the food. The odor of the alcohol is depressed in the antifreezing fluid to extremely reduce an affect to the taste, etc., of the frozen food. |
