Disclosed is the use of bacteria endowed with arginine deiminase to induce apoptosis and/or reduce an inflammatory reaction, and pharmaceutical or dietetic compositions containing such bacteria. Also inclosed is a strain of Lactobacillus brevis highly endowed with arginine deiminase.
