The invention relates to an enzymatically catalysed method for N-acylating amino acids, protein hydrolyzates and/or their derivatives using fatty acid derivatives, in the presence of lipases and/or proteases. The invention also relates to the use of the compounds obtained as tensides in detergents and in environmental technology.
