PROBLEM TO BE SOLVED: To provide a method for producing a sponge cake for obtaining sponge cake pieces each having a fine cut face when cutting the big sponge cake. SOLUTION: This method for producing the sponge cake comprises putting, on a sheet of spreading paper 5 of a wooden frame 4, a protector composed of a vertical piece 1 and crosspieces 2 each having a flat surface which contacts the paper and a handle 3, scattering crystal sugar, putting dough seed, taking out the protector and baking sponge cake through regular processes. As a result, the big sponge cake having no grain of crystal sugar on a position of a knife to cut and divide is made and cut into a given size. COPYRIGHT: (C)2005,JPO&NCIPI
