The system incorporates a freezer wall through which a freezing medium such as brine flows at a temperature below freezing point while the water to be frozen is delivered above or adjacent to the wall, a tank being mounted underneath the wall for surplus water, and also a mechanism for collecting the flake ice after release from the wall. The latter comprises a number of parallel components (1) connected between distribution chambers (2, 3), each component having an elastic wall. Each component can be supported by an internal rigit frame comprising a number of radial ribs so that the elastic wall is of polygonal section. Shutting off the brine flow causes a rise in internal pressure, so that the walls of the components expand and the ice flakes fall off into the collector mechanism (10, 11).
