The subject of the present invention is a food product based on comminuted veal meat. This new product consists of a substance containing, by weight, more than 50% of comminuted lean veal meat with, moreover, veal and/or pork fat, spices, seasonings, and alcoholic liquids, the said substance being packaged in pig gut (a pork casing) or another natural or artificial casing having equivalent porosity. The new product is comparable to veal olives but, on cooking, exudes the constituents for a sauce. |
