PROBLEM TO BE SOLVED: To obtain a high-acidity white vinegar with low pungent odor and mitigated pungent taste, capable of rendering the flavor of dressings mild when used for producing such emulsified-type dressings. SOLUTION: This mild white vinegar is such one that 0.04-0.4 pt.vol. of ethyl acetate, 0.01-1.33 pts.vol. of ethyl alcohol, and 0.00007-0.007 pt.wt. of citric acid, each based on 100 pts.wt. of acetic acid; wherein the acidity of this vinegar is 10-25 w/v%. |
