PROBLEM TO BE SOLVED: To obtain a 'TATAKI' (minced and lightly roasted fish, for example, bonito meat)-like meat food that has good smoke smell of coconut husk according to the background of increasing request of diversified taste preference by roasting meat in a specific manner and smoking the roasted meat with coconut husk. SOLUTION: Raw meat 1A is dressed in suitable shapes, the dressed meat is steamed only at its surface area so that the raw meat may remain in the central part and the partially steamed meat is smoked with coconut husk thereby preparing the objective food product. At this time, the raw meat 1A is washed before or after the steam treatment, to remove contaminants, resultantly the meat is smoked after the moisture is applied thereto. In a preferred embodiment, after the steam treatment and/or after the roasting, the moisture on the surface of the raw meat is removed by air blowing. |
