PROBLEM TO BE SOLVED: To provide a method for producing a food such as a jam, a filling or a sauce having the fresh taste, smell, flavor, color, etc., of a fruit, a vegetable, etc., especially at a low cost in a state hardly limiting a container, a packing material, etc., and a packing volume, etc. SOLUTION: This method for producing a food such as jam, a filling, a sauce, etc., having the fresh smell, flavor, color, etc., of a fruit, a vegetable, etc., comprises mixing a stabilizer with a raw material to be used for the food, such as the fruit or the vegetable, without heating the mixture, charging the mixture into a container, a packing material, etc., sealing the container, the packing material, etc., and subsequently heating the packed mixture at a temperature of <=75 deg.C. The stabilizer comprises at least one king of stabilizer selected from pectin, sodium alginate, gellan gum, carrageenam, guar gum, xanthan gum, locust bean gum and pregelatinized starch. |
