PROBLEM TO BE SOLVED: To obtain a gelling agent controllable of texture, capable of preparing a jelly-like material, etc., provided with heat resistance and acid resistance and useful for fruits jelly, etc., by mixing low molecular weight xantane gum to a gelling agent. SOLUTION: This gelling agent is composed of a gelling agent such as locust bean gum or glucomannan with preferably 0.1-2.0 wt.% of a low molecular weigh xanthan gum having 600,000-950,000 molecular weight. Preferably, a low molecular weight xanthan gum having 100,000-200,000 molecular weight is mixed to a gelling agent such as carrageenan or agar-agar, and an edible jelly-like material is produced by using the gelling agent. |
