PURPOSE:To achieve simplification of production processes, shortening of production time, elimination of the need for using forming retainers or polyethylene bags, reduction in freezing equipment and loss in raw materials, etc. CONSTITUTION:A main raw material prepared by chopping pork into the form of minces or small meat blocks is mixed with a pickling solution obtained by dissolving a vegetable protein and a phosphate to provide a mixed raw material, which is subsequently cooled within the temperature range of -2 to 0 deg.C The mixed raw material in the cooled state is then continuously formed into a product shape with a continuous forming machine and a coating is then applied to the formed product. The resultant formed product with the coating is subsequently frozen. |
