PROBLEM TO BE SOLVED: To provide a saffron-containing composition and product having strong saffron flavor compared with conventional saffron-containing composition and product. SOLUTION: This saffron-containing composition contains saffron and/or a saffron component, one or more kinds of monosaccharide having >=4 carbon atoms and at least one kind of reducing disaccharide. The composition can be processed to chocolate, chocolate product, sugar candy, cake, gateau, product of confectionery shop, confection, vinegar, jelly, marmalade, jam, aspic and other foods. |
