发明名称 PRODUCTION OF MEAT BUCKWHEAT VERMICELLI
摘要 PURPOSE:To obtain a readily eatable food having rich nutritive value, by mixing finely minced meat with flour, dogtooth violet starch, ice water and additive, extruding the resultant mixture from a pressure vessel and dipping the extruded mixture in boiling water. CONSTITUTION:Meat is finely minced with a chopper and a little flour and ice water are added to the finely minced meat. A small amount of an additive, e.g. common salt, spice or extract, is added thereto and thoroughly mixed therewith. The resultant mixture is then extruded from a pressure vessel having plural nozzles to form a slender noodlelike material, which is then dipped in boiling water for several minutes and solidified while heating to afford the aimed meat buckwheat vermicelli. Since the resultant meat buckwheat vermicelli are formed into the slender noodlelike material, they are fully boiled to remove the surface fat. thereby, the aimed meatlike food having light taste can be obtained.
