Stomach, liver, heart are finely chopped, salt, pepper, marjoram and glutamates added and the whole filled into a sausage case which is placed in the stomach cavity of the bird. After cooking, the sausage should be deep-frozen so as to form a cooling insert for fresh-killed birds. The sausage can provide a soup base or be spread as paste on bread etc. |
