PURPOSE:Heated tuberous roots of KONNYAKU are crushed together with alcohol, and water is added to the resultant powder to effect coagulation, thus preparing KONNYAKU-like food with little loss of the starting material. CONSTITUTION:Raw tuberous roots of KONNYAKU are washed with water, combined with ethanol, crushed into a slurry and pressed to remove the ethanol and water. The pressed product is dried into a powder, then combined with water into a paste. A coagulant is added to the paste and the coagulum is boiled to give the objective KONNYAKU-like food. |
