PROBLEM TO BE SOLVED: To provide a method for producing trehalose usable as a sweetening, an agent for protecting a protein from drying, or the like in good productivity by allowing trehalose phosphorylase derived from Coriolus and Lenzites to act on α-glucose monophosphate and glucose. SOLUTION: This method for producing trehalose from α-glucose monophosphate and glucose comprises using trehalose phosphorylase derived from Coriolus versicolor or Coriolus hirsutus belonging to the genus Coriolus, or Lenzites betulina belonging to the genus Lenzites, and allowing the trehalose phosphorylase to act on α-glucose monophosphate and glucose at pH 2-10 to produce the objective trehalose useful as a sweetening, an agent for protecting a protein from drying, or the like, in high productivity. |
