A process and power assembly split animal carcasses using a hanging splitting assembly (11) which is then transferred to a cleaning booth after each operation. Each cleaning operation takes less time than the carcass splitting operation. The process comprises: (a) a second splitting assembly (12) is also employed; (b) a second splitting process is commenced, while the first splitting assembly is in the cleaning booth (21); (c) the cleaned splitting assembly is then removed from the booth and repositioned ready for the next operation; (d) during the last stage of its motion towards the cleaning booth, the second separation assembly is suspended from a rail (4) which is separate from that (3) on which the first separation assembly is suspended.
