PROBLEM TO BE SOLVED: To provide fish bone powder suitable as a calcium source nutrition food by treating the central bones of fishes or their fish-removed residual bones with a protease in order to effectively utilize the central bones of the fishes, such as salmon, wherein the central bones have a considerable amount of the adhered fish which is difficult to be perfectly removed. SOLUTION: This method for producing fish bone powder comprises treating the central bones of fishes such as salmons and/or their residual bones with an endo type protease so that the long joints are separated into individual joints and so that marrow flesh is eliminated from the central portions of the joints, separating.recovering the joint bones from the treating product, and subsequently obtaining the fish bone powder from the recovered joint bones. The fish bone powder is obtained from the recovered joint bones by washing the recovered joint bones with water, grinding the washed joint bones, and subsequently freezing the ground bones, by washing the recovered joint bones with water, removing oils from the washed bones, drying the bones and subsequently pulverizing the dried bones, or by washing the recovered joint bones with water, incinerating the washed bones, and subsequently pulverizing the incineration product. |
