PROBLEM TO BE SOLVED: To obtain frozen cooked rice of high quality. SOLUTION: This frozen cooked rice is obtained by freezing cooked rice, wherein trehalose and dextrin as enzyme nutrient sources are added together with water to rice, while it is being cooked.
