A veal (2) sausage has an outer skin (1) at the center of which is a mustard core (3). The skin (1) is sealed by a clip or closure (4). The sausage skin (1) is a soft elastic material which resists tension and tearing, and is temperature resistant. The Shore D-hardness is between 0.6 and 15. The E-modulus is between 0.1 and 750 N/mm<2>. Resistance to external pressure is between 0.05 to 17.5 N/mm<2>. Impact resistance is between 0.003 and 2.5 KJ/m<2>.
