The frozen confectionery has a structure intended to convey an interesting texture and sensation in the mouth when consumed. The frozen confectionery is provided with at least one zone which consists, to a major extent, of gel particles, preferably in spherical form, for example fruit-flavoured gel particles, and, to a lesser extent, an intermediate phase containing ice cream, for example an exudate of the particles or a fruit sauce. The confectionery can be prepared by pumping preshaped gel particles, preferably as a mixture with a fruit sauce, of a freezing station, followed by freezing.
