In a discontinuous mash and wort boiling process in beer prodn, the clarified wort is boiled under little or no pressure, the vapour from wort boiling is used to heat hot water in a first heat exchange process (26) and the heated water is collected in a hot water storage tank (30) prior to use in a second heat exchange process (13) in which the clarified wort is heated before boiling by hot water from the storage tank (30), the resulting cooled hot water being returned to the first heat exchange process (26). Opt simultaneously with the second heat exchange process (13), a third heat exchange process (34) is carried out, in which heat is supplied to the mash process by hot water from the storage tank (30), the resulting cooled hot water being returned to the first heat exchange process (26). ADVANTAGE - The process provides max storage of the vapour energy produced by wort boiling and produces no excess hot water since any excess vapour energy, which cannot be returned directly to the wort boiling process, is supplied to the mash brewing process to achieve reduced heat emission to the environment and reduced primary energy and water requirements.
