PROBLEM TO BE SOLVED: To obtain a gas barrier laminated product having gas barrier higher than before under high humidity even after being exposed to a high temperature and high humidity though a water-soluble polymer is used and conditions milder than before about the gas barrier laminated product which is excellent in handling property without curling and efficient and economical conditions. SOLUTION: A method of manufacturing the gas barrier laminated product includes the steps of coating (C1) for forming a gas barrier layer containing a polyalcohol polymer (A) and a polycarboxylic acid polymer (B) is applied through an undercoat layer directly on double-sides of a plastic substrate, heat treated, a gas barrier precursor layer (P1) is formed, and then, heat treating under the existence of water (W1) containing a univalent metal compound (D1) and/or a basic organic compound (D2), and a metallic compound (E) of bivalent or more valents.
