<P>PROBLEM TO BE SOLVED: To provide a method for producing a gel-shaped food by which the risk of damaging the characteristics of a gelling agent by the heating in the production process is reduced and which provides excellent production operability. <P>SOLUTION: The method for producing the gel-shaped food includes mixing the gelling agent with a liquid, preparing a gelling agent solution in which the gelling agent is dissolved by imparting ultrasound vibration for 8-17 min while heating the mixture to 60-80°C, mixing other raw materials with the gelling agent solution to afford a solution of the gel-shaped food, and cooling and solidifying the solution of the gel-shaped food to afford the gel-shaped food. The gelling agent is preferably one or more kinds selected from gellan gum, agar, carrageenan, pectin, Locust bean gum, xanthan gum, glucomannan and gelatine. <P>COPYRIGHT: (C)2009,JPO&INPIT |
