PROBLEM TO BE SOLVED: To provide processed meat foods excellent in binding property without adding binding agent, enhancing gourmet preference and their manufacturing method. SOLUTION: This processed meat food is obtained by mixing and cooking meat with a paste comprising a filler obtained by crushing or grinding fresh seafood and/or fresh meat after cooking or seasoning and cooking in a state selected from untouched state, a state after removing unedible part and a state of a sliced fish, 20 to 100 pts.wt. of water per 100 pts.wt. of meat, 0.1 to 1.0 pts.wt. of alkaline material and at least a seasoning agent and mashing down under vacuum <=1000 Torr. |
