PROBLEM TO BE SOLVED: To produce dried persimmons in a desired timing by regulating a manufacturing time of the dried persimmons to prevent quality reduction caused by a long period of preservation of the dried persimmons and increase handling amounts of astringent persimmons harvested at a centralized season. SOLUTION: This method for treating astringent persimmons is to increase sweetness by enabling to loose astringent taste of peeled astringent persimmons. The method has a freezing and preserving process for freezing and preserving the astringent persimmons ahead of a drying process for treating the peeled astringent persimmons to dry. By freezing and preserving the astringent persimmons and regulating a manufacturing time, the dried persimmons are produced in a desired timing, quality depression caused by a long time of preservation of the dried persimmons can be prevented and a treatable amount of the astringent persimmons harvested at a centralized season can be increased. |
