Dried yeats is produced by fixing the moist yeast on a carrier consisting of finely dispersed particles of a solid inert material (cork chips). The particles are impregnated with a nutrient medium and the yeast is grown on them. the following final drying phase is assisted by an adsorbent (zeolite granules) which is more hydrophilic than the carrier particles. This combines the conventional three operations prior to the final drying into one single stage, resulting in savings of time and appts. A smaller percentage of the yeast is destroyed by the new procedure.
